More than 50 Greek and international natural wine producers gather at the Athens Conservatoire on November 2 for FYSIKA 2025. A one-day celebration of authentic, low-intervention wines, sustainability, and community

On Sunday, November 2, the Athens Conservatoire opens its doors to FYSIKA, the biggest celebration of natural wine in Greece. For one full day, over 50 producers from Greece and abroad will welcome visitors with more than 300 wines that speak the language of their land.

From Thrace to Crete and Ikaria to the Peloponnese, winemakers from all over the country meet in Athens to showcase the diversity and vitality of Greek natural wine and its rich terroirs. Guest winemakers from Serbia, France, and Hungary, among others, will also be present.

What visitors will taste

Organic and biodynamic wines with little or no added sulphites, indigenous yeasts, unfiltered and unfined-wines that carry within them the essence of their origin and their maker. In a single day, visitors will meet the winemakers in person and taste authentic, low-intervention wines that are environmentally conscious and full of character.

The experience

At the historic Athens Conservatoire, guests can expect much more than a wine tasting:

– Dozens of rare grape varieties and experimental labels rarely found on the market.
– Conversations with producers about the stories behind each bottle.
– A deep dive into the philosophies and techniques that redefine winemaking.
– New connections and shared impressions within a community passionate about natural wine.

Sustainability

Natural wine is not a trend-it’s a way of life. It means respect for the environment and honesty in the glass.

At FYSIKA, all equipment is reused, single-use plastics are completely avoided, and glass bottles, corks, cigarette butts, and organic materials are given a second life through recycling and composting.
